Honey Granola Breakfast Before A Hike

We went for a hike on Saturday morning.  This granola was the perfect breakfast before we went.  It was so easy to make and so much healthier and tastier than what you’d buy at the store.  It’s really good with milk, yogurt and berries or even by itself to snack on in the afternoon.  Most granolas have nuts in them, which wont work for us, but you can definitely add in some almonds if you’d like.  Promise you will love this!

Preheat your oven to 250.  Spray a baking sheet with cooking spray.  In a large bowl combine oats, flour, brown sugar and cinnamon.  Stir well, breaking up any pieces of brown sugar. In a separate bowl, combine butter and honey and microwave until butter is completely melted.  Add vanilla and stir well.  Pour melted butter mixture over oats and stir to combine.  Spread granola onto your baking dish.  Bake for 1 hour and 15 minutes.  Give it a good stir when it is finished baking and let it cool.  It will harder up as it cools. Store in an airtight container.

Lots of things to see and do for little boys on hikes.  I hope we are always able to go hiking together as a family on the weekends. It’s a nice activity for male bonding as well.

Sticks and mud can still entertain my boys for very long periods of time.

My Luke is usually my easiest child, however he has had a pretty bad week.  His asthma and skin have been bothering him, which I hope is mostly to blame for his fits.  He also requires more sleep than his brothers, but living in such tight quarters makes it hard for him to get enough rest.  I was a little worried about my camera + sticks + bad attitude.

Constant battle of who is first, strongest, toughest, in charge, etc etc.

It was cold, but still great weather for being outside this weekend.

Recipe: Honey Granola

Ingredients

  • 2 1/2 cups old-fashioned oats
  • 2/3 cup flour
  • 1/2 cup packed light brown sugar
  • 2 teaspoons cinnamon
  • 1/2 cup butter
  • 1/2 cup honey
  • 1 teaspoon vanilla

Directions
