Simple Tomato Sauce

This is a wonderful and super simple meatless tomato sauce. Much tastier and healthier than store bought and it only takes a few minutes to prepare. Topped with freshly grated parmesan makes a big difference as well. Brian even loves it and is great with having a vegetarian meal on a weekly basis. He didn’t always feel that way. This sauce is also excellent for a quick lunch, dinner when it’s just me and the boys, or dinner for just the boys if Brian and I are lucky enough to have dinner plans out. Pretty much anytime you want an easy and yummy meal, this works perfect!
Simple Tomato Sauce

Ingredients
- 2 tablespoons unsalted butter
- 1/4 cup finely minced onion
- 1/4 teaspoon dried oregano
- 2 garlic cloves, minced
- 1 28 oz. can crushed tomatoes
- 1/4 teaspoon sugar
- 2 tablespoons chopped fresh basil (use 1 tablespoon dried if that's all you have)
- 1 tablespoon olive oil
Directions
| Melt butter in saucepan over medium low heat. Add onion, 1/2 teaspoon salt and oregano and cook until onions are golden brown. About 3-5 minutes. Add garlic and cook about 30 seconds. Stir in tomatoes and sugar and increase heat to medium high. Bring to a simmer and reduce back to medium low. Simmer until thickened, about 15 minutes. Off heat, stir in basil and oil. Season with salt and pepper. Serve with freshly grated parmesan. | |

Yummmmmmm!!! I made this the other night and doubled it, and added ground beef and ground sausage and it was so good! I’m freezing the leftovers and we can have it again. I also added garlic powder because I love that flavor. I’m making the marshmallow chocolate cake tonight.
